Ingredients:
Grape tomatoes
Fresh Mozzarella – cut into cubes
1/4 cup Extra virgin olive oil
2 tablespoons Balsamic Vinegar
1/4 teaspoon black pepper
1/4 teaspoon salt
*1/4 teaspoon Italian seasonings (optional)
Basil leaves – sliced in half
Skewers/long toothpicks
Preparation:
Slice grape tomatoes in half and fresh mozzarella into thirds or 1/2 inch cubes.
In a mixing bowl, whisk together extra virgin olive oil, balsamic vinegar, pepper, & salt. *Italian seasonings are optional and not used in Caprese salads generally but I put a very light amount for a hint of freshness. Pinch of seasoning goes a long way and won’t overpower other flavors.
On a skewer, thread piece of basil first then half a grape tomato followed by a mozzarella cube and the last half of the grape tomato.
Voila! You’ve got caprese bites! Fun and fancy lookin’ finger food for any occasion!
